General
  • Coconut water is the liquid endosperm inside young coconuts. As the coconut matures this liquid largely becomes absorbed into the flesh found in mature coconuts. Coconut water has long been a popular drink in the tropics. It is naturally fat-free and low in food energy. Due to its sterility, pH, mineral, and sugar content, coconut water had been successfully used as liquid in intravenous therapy in emergency situations.
  • The water of tender coconut, is the most nutritious wholesome beverage that the nature has provided for the people of the tropics to fight the sultry heat. It is unctuous, sweet, increasing semen, promoting digestion and clearing the urinary path," says Ayurveda on tender coconut water (TWC).

Production & Technology

  • Production of coconut water vinegar by fermentation requires 2-3 months employing the traditional process. Development of the semi continuous process resulted in a simple, economical and accelerated method. It can be easily adopted in the rural areas since no sophisticated equipment and very small capital investment are needed.
  • A technological innovation enables farmers and communities in rural areas to process their coconuts and produce a marketable product. This increases family income and avoids transportation efforts and waste deposit in the cities whereas the fibres can remain on the farm.
  • Bottling coconut water process helps coconut water stay fresh from 10 days to three weeks under refrigeration. Called cold preservation technology, it is appropriate for small and medium-sized agro-industries that produce bottled coconut water.

Applications

  • A test was taken for powdered coconut water (ACP-106) as an alternative extender for cryopreserved canine semen. An extender based on sucrose and lactose was used for canine semen cryopreservation, but the results were not favorable. Tris is one of most used extenders for cryopreservation of canine semen.
  • The water of the tender coconut, generally known as mineral water, is used as a beverage and refreshing drink. A tender coconut, which is fully-grown and only one month old, contains about 400 to 465 cc of water. It is an excellent tonic for health. Coconut water is very useful in the treatment of cholera. Green coconut water is rich in potassium. Thus, coconut water is recommended for cholera patients.

Market

  • Five enterprising MBA students of Ahmedabad established another tender coconut water unit in Gujarat. A Deputy Director of CDB said that according to the market demand we are ready to give financial support to set up a tender coconut water unit in Andhra Pradesh at a cost of Rs. 50-60 lakhs, particularly in East or West Godavari districts.
  • The Brazilian coconut water market is around 600 million liters a year. The development of machinery to extract the water from the fruit and the packaging technology has made the sector expand rapidly since the 1990's. If coconut is grown in 1.93 million hectares in the country, which yields 12,147.6 million nuts per year, the area under cultivation in the State is 80,000 acres.
